I started my cake-making journey around the age of four, sitting on the counter while my dad baked cupcakes, and was able to lick the spoon. Over the years, I was at the helm, standing on a chair by the stove. I made pavlova and custard when I was six and started decorating cakes as a teenager. While my passion for baking started young, I had only really been decorating party cakes for a few years before entering competitions. So with a little knowledge and a lot of creativity, I know you can too. If you are a beginner, I suggest you start with an easy basics. Make a round, dense mud cake and decorate it with chocolate ganache. A dense cake can be cut easily without large pieces falling out. A round cake pan is perfect for beginners as there are no burned corners, and the chocolate ganache will smooth and harden for easier handling of the cake. Once you’ve mastered this technique, move on to buttercream cakes. Buttercream seems to be easy, but the consistency of the frosting can make or break a cake. Pipe buttercream doesn’t have to run off your cake, providing a great canvas for flowers, nuggets, gold leaf, or whatever your heart desires. And finally, what you’ve all been waiting for; decoration with fondant. Fondant is the least forgiving of all the styles of frosting. It can crack, stretch, and melt in the refrigerator. Fondant is basically edible marshmallow play dough. It’s a lot of fun to experiment with, but it can dry out if left out of its container. Prepare your cake in advance. I would suggest a cake covered with ganache on the first start. Measure the sides and the top then roll out your fondant to the diameter of your cake; the cornmeal will help prevent the fondant from sticking. Roll it onto the rolling pin and gently drape it over the side of the cake using your hands (or smoother fondant) to adhere it to the cake. Gently smooth out any ruffles and air bubbles. The great thing about fondant is that it can be used to cover up mistakes. Hole in your fondant? Use a cookie cutter to cut shapes out of fondant and glue them to the cake using edible glue, which you can buy at most cake decorating stores. Fondant is also great for making edible figurines. If you want to play with fondant before you cover cakes, figurines are a great way to familiarize yourself with the support. You can then try out plasticine flowers and even model chocolate figurines.
