Winter citrus fruits are celebrated through this magnificent upturned cake and will accompany you throughout the summer. There is nothing too fancy about this cake, but the little extra effort to slice the citrus fruits and roll them out to the bottom of the cake pans results in something very beautiful. The fruit and butter mixture keeps the cake moist and while the thyme is completely optional, it tastes so good in the cake. Rosemary can also be used if you prefer. Any of your favorite citrus fruits can be used. We used slices of navel, blood orange, cara cara orange, grapefruit and lemon. Do your best to really fill the entire bottom with fruit, cutting the slices and overlapping slices as needed.

For the fruit filling

4 to 5 citrus fruits, such as a variety of oranges, grapefruits or lemons

For the cake batter

1 1/2 tsp.

all purpose flour

1/2 tsp.

(1 stick) butter, softened

1/4 tsp.

packaged brown sugar

freshly chopped thyme

  1. Preheat the oven to 350 °. Butter a 9-inch round cake pan and line with parchment paper. Slice the fruit to ¼ “thick. Use a pairing knife to cut off the skin and as much of the skin as you can.
  2. In a small bowl, combine the sugar and melted butter. Pour into the bottom of the prepared pan and spread in an even layer. Arrange the fruits on top, overlapping them slightly so that the bottom is completely covered.
  3. In a medium bowl, combine flour, baking powder and salt.
  4. In a large bowl using a hand mixer, beat the butter, sugars, thyme and orange zest until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat with vanilla. Add the dry ingredients and beat until almost incorporated. Add buttermilk and beat until just combined. Pour the batter over the arranged fruit and carefully roll out an even layer.
  5. Bake in preheated oven until toothpick inserted in center comes out clean, 35 to 40 minutes. Let cool for 10 to 15 minutes, then invert onto a serving platter. Let cool completely.
