Best Apple Coffee Cake Recipe

Apples work wonders in this easy coffee cake. They add extra sweetness and make the cake even softer and more tender. We love it with Granny Smith and Honeycrisp apples, but your favorite cooking apple will do! The streusel filling adds that crunchy texture and makes this cake extremely addicting. It’s only made better by serving it with a hot cup of coffee and a good friend.

  1. Preheat the oven to 350 ° with a rack in the middle position; Lightly coat a 9 ”x 13” baking dish with cooking spray. In a medium bowl, combine flour, cinnamon, salt, baking powder and baking soda.
  2. In a large bowl using a hand mixer or in the bowl of a stand mixer fitted with the paddle, beat the butter and sugars together on medium speed until creamy. Add eggs, one at a time, beating well after each addition. Add the vanilla and beat to combine. Scrape down sides of bowl to make sure everything is incorporated evenly. Add the dry ingredients and beat on low speed until only a few dry streaks remain. Add sour cream and beat until just combined. Stir in the apples. Transfer the dough to the prepared pan and smooth the top with a spatula.
  3. In a medium bowl, combine the melted butter, flour, sugar, cinnamon and a pinch of salt. Sprinkle breadcrumbs on top of the dough.
  4. Bake in the preheated oven until golden brown and a toothpick inserted in the center of the cake comes out clean, 50 to 60 minutes. Let cool completely.
  5. Garnish with powdered sugar, if desired.
