Ina Garten makes her Apple Spice Cake recipe with delicious tart apples, but she also adds a few ingredients that she claims to “put on top” when it comes to flavor. The Barefoot Countess star adds raisins to her apple spice cake, but soaks them in alcohol for a truly superior flavor.
Ina Garten shared the secret to her ‘amazing’ apple spice cake recipe
Garten’s Easy Cake can be served on its own or with additional toppings. “My fresh apple spice cake is unbelievable, she explained in an episode of Barefoot Countess. “But it’s the rum-soaked raisins that put it way above it.”
She noted that she used golden raisins because “they’re a little sweeter” and “look great in the cake.” Garten poured dark rum over the raisins, sharing that the alcohol has “a bit of a caramel flavor and will work well with apples.” She microwaved the mixture for 60 seconds “so the raisins swell and the rum soaks into the raisins.”
Garten made the cake by first combining sugar, brown sugar, eggs, vanilla, orange zest and oil. “Think how delicious all of these flavors are with apple,” she said before beating the mixture in a stand mixer “until light and fluffy”.
Garten then combined the dry ingredients in a sieve: flour, baking powder, cinnamon, ground nutmeg, ground ginger, cloves and salt. She sifted the flour and spices together, then slowly added it to the wet ingredients with the mixer running on low speed.

While demonstrating the recipe on her cooking show, Garten explained how successful it was when she sold it at her Barefoot Contessa store. “It’s not fancy. Just really delicious and earthy, ”she said. “And you always want to come back for more.”
Garten drained the raisins and added them to the batter, along with toasted pecans and diced Granny Smith apples, before folding everything together.
“And the good thing is you can get ahead,” she noted. “It’s only getting better.”
Garten poured the dough into a greased and floured rectangular pan and baked the cake for 35 minutes in an oven at 350 degrees Fahrenheit.
She let it cool before turning the cake over on her hand, removing the parchment paper, and setting it upright on a cutting board to cut it into chunks.
“With an afternoon cup of tea, it’s a perfect snack,” she noted.

Of course, Garten showed off how to make dessert even more decadent with a few easy additions you won’t want to ignore.
“If you want to make a great dessert out of it, I’ll show you what I do,” she said. Garten plated the square of apple spice cake and placed a scoop of vanilla ice cream next to it. She recommended taking the ice cream out of the freezer and allowing it to soften in the fridge for half an hour before taking it.
“And not to be left alone enough, I have hot caramel sauce – store bought,” she noted. “You don’t need to make your own caramel sauce.” She poured the sauce on the plate, the cake and the ice cream.
“I would say this is a dessert that everyone will be very happy to try,” she added.
